This BBQ Chicken Grilled Cheese Sandwich brings together smoky shredded chicken, melty cheese, and golden grilled bread for the ultimate comfort food. Perfect for lunch or dinner, it’s quick, satisfying, and packed with flavor.
Ingredients

2 slices thick-cut white bread or sourdough

½ cup cooked chicken, shredded or chopped

2–3 tablespoons BBQ sauce

2 slices cheese (cheddar, provolone, gouda, havarti, or mozzarella)

1 tablespoon butter or mayonnaise (for spreading)

Optional additions: thinly sliced red onion, fresh cilantro, or mashed avocado
Instructions

Prepare the Chicken:
In a small bowl, mix the shredded chicken with the BBQ sauce until well coated. Set aside. -
Assemble the Sandwich:

Spread butter or mayonnaise on one side of each bread slice.

Place one slice of cheese on the unbuttered side of one slice.

Spoon the BBQ chicken mixture over the cheese.

Add optional toppings if using.

Top with the second slice of cheese, then close the sandwich with the second bread slice, buttered side facing out.

Grill the Sandwich:

Heat a skillet or griddle over medium heat.

Place the sandwich in the skillet, buttered side down.

Cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese has melted.

If needed, lower the heat and cover the pan to help the cheese melt without burning the bread.
