This sausage breakfast quiche is warm, filling, and easy to make. Packed with protein, melty cheese, and tender sausage, it’s the perfect make-ahead dish for a cozy morning meal.

  • 6 large eggs

  • 1 cup heavy cream (or half-and-half)

  • ½ pound breakfast sausage, cooked and crumbled

  • 1 cup shredded cheddar cheese (or Gruyère/Swiss)

  • 1 prepared 9-inch pie crust (homemade or store-bought)

  • Salt and pepper to taste

  • Optional: sautéed onions or bell peppers for added flavor

Instructions

 

  • Preheat Oven:
    Set your oven to 375°F.

  • Cook the Sausage and Veggies:
    In a skillet over medium heat, cook the sausage until browned. Drain excess fat. If using vegetables, sauté them in the same pan until softened.

  • Prepare the Pie Crust:
    Roll out the pie crust and press it into a 9-inch pie dish.

  • Layer the Fillings:
    Add the sausage to the bottom of the crust, followed by the sautéed vegetables if using.

  • Make the Egg Mixture:
    In a mixing bowl, whisk together the eggs, cream, salt, and pepper.

  • Assemble the Quiche:
    Pour the egg mixture over the sausage. Sprinkle cheese evenly across the top.

  • Bake:
    Place in the oven and bake for 35–40 minutes, or until the center is set and the top is golden. Let cool for 10 minutes before slicing.
