Easy Buffalo Chicken Grilled Cheese recipe ready in 20 minutes. Perfect for a quick, spicy lunch or dinner using leftover chicken.
8 slices sandwich bread
2 cups cooked chicken breast, shredded
2 teaspoons minced garlic
¼ teaspoon cayenne pepper (optional)
1 teaspoon ground black pepper
½ teaspoon paprika
½ cup hot sauce
½ cup ranch dressing
4 oz cream cheese, softened
4 tablespoons butter
4–8 slices Muenster cheese (or your preferred sliced cheese)
4 tablespoons crumbled blue cheese
In a small bowl, combine softened cream cheese, crumbled blue cheese, paprika, black pepper, and cayenne pepper. Mix well and set aside.
In another bowl, mix shredded chicken, hot sauce, ranch dressing, and minced garlic until the chicken is fully coated.
Butter one side of each bread slice. Flip the slices over and spread the cream cheese mixture on four slices (one per sandwich). Top evenly with the buffalo chicken mixture—about ½ cup each.
Add one or two slices of your preferred cheese on the remaining bread slices, then close each sandwich with the cheese side down.
Heat a skillet over low heat and lightly grease it. Cook the sandwiches for 5 minutes on each side, until bread is golden and crispy and cheese melts. Cook in batches if needed.
Remove from the pan and serve warm with extra hot sauce, ranch, or blue cheese dressing if desired.
