12 oz breakfast sausage
1½ cups shredded Colby Jack cheese
6 tablespoons unsalted butter
1¾ cups plus 2 tablespoons all-purpose flour
1 tablespoon granulated sugar
1 tablespoon baking powder
½ teaspoon kosher salt
1½ cups buttermilk
Preheat the oven to 450°F. Cut butter into chunks and place in a microwave-safe 8- or 9-inch square baking dish. Microwave until fully melted.
In a large skillet over medium-high heat, cook the sausage until it’s no longer pink. Drain off any excess grease.
In a large bowl, mix together the flour, sugar, baking powder, and salt. Add the cooked sausage and shredded cheese. Stir in the buttermilk until a loose, sticky dough forms.
Remove the baking dish with melted butter from the microwave. Gently press the dough into the butter-filled pan, spreading it evenly. Lightly flour your hands or the top of the dough if needed.
Score the dough into 9 squares using a knife.
Bake for 20 to 25 minutes, or until the tops are golden brown and the butter is mostly absorbed.
Let cool slightly before serving.
