1 tablespoon oil
1 tablespoon butter
1 onion, finely chopped
1 rib celery, finely chopped
½ green bell pepper, finely chopped
1 lb ground chicken
3 tablespoon Cajun seasoning (see note 1)
3 cloves garlic, minced
½ cup crushed tomatoes
½ tablespoon brown sugar
½–1 teaspoon hot sauce, optional
½ cup heavy cream
¼ teaspoon salt (see note 2)
4 burger rolls
Optional Toppings: sliced cheese, slaw, sour cream, shredded lettuce
Heat the oil and butter in a large skillet over medium-low heat.
Add chopped onion, celery, and bell pepper. Sauté for 7-8 minutes until soft.
Stir in ground chicken. Break it apart and cook for about 5 minutes until no longer pink.
Mix in Cajun seasoning and minced garlic. Stir for one minute, careful not to brown the garlic.
Pour in crushed tomatoes, brown sugar, hot sauce (if using), and heavy cream. Combine well.
Lower heat and simmer for 15 minutes, stirring often to avoid sticking.
Taste and add salt if needed.
Toast burger rolls, fill with the chicken mix, and add your favorite toppings.
