This Carrot Apple Salad combines crisp apples, carrots, and sweet mandarins with a creamy yogurt dressing for a light and colorful side dish perfect for any gathering.

  • 1 red apple, thinly sliced into matchsticks

  • 1 green apple, thinly sliced into matchsticks

  • 2 tablespoons lemon juice

  • 2 cups matchstick carrots

  • ¼ cup yellow onion, finely diced

  • ⅓ cup dried sweetened cranberries

  • ½ cup vanilla yogurt

  • ¼ cup mayonnaise

  • 1 tablespoon sugar

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 cup canned mandarin orange segments, drained

Instructions

 

  • Slice both apples into thin matchsticks and place them in a medium bowl.

  • Add lemon juice to the apples and toss gently to coat, helping to prevent browning. Let sit for 5 minutes.

  • In a large mixing bowl, combine the carrots, diced onion, and cranberries.

  • Add the lemon-coated apples to the mixing bowl.

  • Stir in the vanilla yogurt and mayonnaise until everything is evenly coated.

  • Sprinkle in the sugar, salt, and pepper. Mix well.

  • Gently fold in the mandarin orange segments.

  • Cover the bowl and refrigerate for at least 3 hours to allow the flavors to blend.

  • Serve chilled and enjoy.
