Cheesy Corn Fritters

Easy and crispy fritters bursting with cheesy corn flavor.

  • 2 cups of corn
  • 1/4 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 egg
  • 1 green onion (chopped)
  • 1/2 cup grated parmesan or cheese of your choice
  • 1 handful cilantro (chopped)
  • 1 tablespoon lime juice
  • Salt and fresh cracked pepper to taste
  • 1 tablespoon oil
  • Sour or heavy cream, for garnish

Instructions

  • In a large bowl, combine the corn, cornmeal, flour, paprika, egg, cheese, green onion, cilantro, and lime juice. Stir well until everything is evenly mixed. If the mixture seems dry, add a splash of water.

  • Heat oil in a skillet over medium heat.

  • Scoop spoonfuls of the mixture into the hot pan, flattening slightly into patties.

  • Cook for about 4 minutes per side, or until both sides are golden brown and crisp.

  • Transfer to a paper towel-lined plate. Serve warm with a dollop of sour cream or heavy cream.
