Delicious cheesy ranch roasted potatoes with smoked sausage make an easy, hearty meal perfect for weeknight dinners.

Ingredients

  • 1 pound halal smoked sausage (beef or turkey), sliced into 1/4-inch rounds

  • 4 cups baby potatoes, halved or quartered

  • 2 tablespoons olive oil

  • 1 packet ranch seasoning mix (halal-certified)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon black pepper

  • 1 1/2 cups shredded cheddar cheese (or a blend of cheeses like mozzarella or Monterey Jack)

  • 1/2 cup sour cream (optional, for serving)

  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Preheat Oven: Set oven to 400°F.

  • Prepare Ingredients: Wash and cut baby potatoes. Slice the smoked sausage into rounds.

  • Mix Seasonings: In a small bowl, stir together ranch seasoning, garlic powder, onion powder, and black pepper.

  • Season Potatoes: In a large bowl, toss the cut potatoes with olive oil and half of the seasoning mix until well coated.

  • Assemble on Baking Sheet: Line a baking sheet with parchment paper or lightly grease it. Spread the seasoned potatoes in a single layer. Distribute sausage slices evenly on top.

  • Bake: Roast in the oven for 35 to 40 minutes, stirring once halfway through, until potatoes are golden and tender.

  • Add Cheese: Remove from oven, sprinkle shredded cheese evenly over the top, and return to the oven for 5 more minutes or until cheese is melted and bubbly.

 

  • Serve: Garnish with fresh parsley and serve hot. Add sour cream on the side if desired.
