For the Noodles

  • 16 ounces dry fettuccine pasta

For the Chicken

  • 1 pound boneless, skinless chicken breasts

  • 1 teaspoon Italian seasoning

  • ¾ teaspoon kosher salt

  • ¼ teaspoon black pepper

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon butter

For the Alfredo Sauce

  • ½ cup butter (cut into cubes)

  • 2 cups heavy whipping cream

  • 1 clove garlic, minced

  • ¾ teaspoon garlic powder

  • ¾ teaspoon Italian seasoning

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 cups freshly grated Parmesan cheese

Instructions

Step 1: Cook the Fettuccine

Bring a large pot of salted water to a boil. Add fettuccine and cook until al dente, about 10 minutes. Reserve ½ cup of the pasta water, then drain and set aside.

Step 2: Prepare the Chicken

While the pasta cooks, season the chicken with Italian seasoning, salt, and pepper. Heat olive oil in a large nonstick skillet over medium-high heat. Once hot, add chicken and sear for 5–7 minutes per side. Add 1 tablespoon of butter while cooking for flavor and moisture. Cook until the internal temp reaches 165°F. Remove and let rest for 3 minutes before slicing into ½-inch strips.

Step 3: Make the Alfredo Sauce

In the same skillet over medium-low heat, add butter and cream. Whisk until the butter melts completely. Stir in minced garlic, garlic powder, Italian seasoning, salt, and pepper. Simmer gently for 3–4 minutes, whisking constantly.

Step 4: Add the Cheese

Lower heat and slowly stir in Parmesan cheese. Mix until smooth. If the sauce is too thick, add reserved pasta water, one tablespoon at a time.

Step 5: Combine and Serve

 

Remove from heat. Add pasta to the sauce and toss until well coated. Serve in bowls topped with sliced chicken. Garnish with parsley, extra Parmesan, and black pepper if desired.
