  • 2 tablespoons olive oil (or unsalted butter)

  • 1 medium onion, chopped (yellow or white)

  • 3 cloves garlic, minced

  • 3 carrots, peeled and sliced

  • 3 medium potatoes, diced (Yukon gold or red recommended)

  • 2 cups cooked chicken, shredded (rotisserie or leftover)

  • 6 cups low-sodium chicken broth

  • 1 teaspoon dried thyme

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • 1 bay leaf (optional)

  • 2 tablespoons fresh parsley, chopped

Instructions

 

  • Sauté the Vegetables:
    In a large soup pot, heat the olive oil over medium heat. Add chopped onions and cook for about 5 minutes, until soft and translucent. Stir in the minced garlic and sliced carrots, cooking for another 3–4 minutes.

  • Add Potatoes and Broth:
    Add the diced potatoes to the pot. Pour in the chicken broth and gently stir. Bring the mixture to a boil.

  • Simmer and Season:
    Lower the heat to a simmer. Add thyme, salt, black pepper, and bay leaf. Cover the pot and simmer for 20–25 minutes, or until the potatoes are fork-tender.

  • Add the Chicken:
    Stir in the shredded cooked chicken. Let the soup simmer for an additional 5 minutes to warm the chicken through and meld the flavors.

  • Finish and Serve:
    Remove the bay leaf. Stir in fresh parsley. Serve hot with your choice of bread or salad.
