This quick and flavorful corn salsa is inspired by the popular Chipotle version. Made with sweet corn, red onion, jalapeno, lime juice, and cilantro, it’s the perfect balance of freshness, spice, and natural sweetness. A great make-ahead option for gatherings, tacos, or bowl meals.
Ingredients

16 ounces frozen sweet corn (white or yellow)

½ medium red onion, diced

2 jalapenos, seeded and diced

⅓ cup finely chopped fresh cilantro

¼ cup fresh lime juice (optional: add a small squeeze of lemon)

¼ teaspoon fine sea salt, or more to taste
Instructions

Heat a large sauté pan over medium-low. Add the frozen corn and cook, stirring occasionally, until hot—about 4 to 5 minutes.

Spread the warmed corn out on a baking sheet or large plate to cool.

In a large bowl, combine the red onion, jalapeno, cilantro, and lime juice. Add salt to taste.

Stir in the cooled corn and mix well. Taste and adjust seasoning as needed.

Serve immediately or chill in the refrigerator for a few hours to enhance the flavor.

Storage Tip:
Store in an airtight container in the fridge for up to 5 days. Great for meal prep and parties.
Using Fresh Corn:
Boil 4 to 5 ears of corn (husks and silks removed) in water for 1 to 2 minutes, then cool and cut off the kernels. For a smoky flavor, grill the corn before slicing.
