Ingredients
For the Brownies:
-
1 box brownie mix
-
2 large eggs
-
½ cup vegetable oil
For the Cookie Dough Filling:
-
1 cup all-purpose flour (heat-treated, see note)
-
½ cup light brown sugar, packed
-
¼ cup granulated sugar
-
1 teaspoon vanilla extract
-
½ cup unsalted butter, softened
-
¾ cup semi-sweet chocolate chips
Instructions
-
Preheat the Oven: Set your oven to 350°F (175°C). Lightly grease or line a baking sheet with parchment paper.
-
Prepare the Brownie Batter: In a bowl, mix the brownie mix, eggs, and oil until just combined. Avoid overmixing. Set aside.
-
Make the Edible Cookie Dough: In another bowl, beat together the softened butter, brown sugar, and granulated sugar until smooth. Mix in the vanilla extract and heat-treated flour until fully combined. Fold in half of the chocolate chips.
-
Shape the Cookie Dough Centers: Scoop and roll the cookie dough into 1-inch balls. Place on a plate and chill in the refrigerator for 10–15 minutes.
-
Assemble the Brownie Bombs: Scoop some brownie batter into your hand and flatten slightly. Wrap the batter around a chilled cookie dough ball and seal to form a smooth ball. Repeat with the remaining ingredients.
-
Bake: Arrange the brownie bombs on the prepared baking sheet, leaving space between each. Bake for 15–18 minutes or until the edges are set but the centers are still soft.
-
Cool and Serve: Let them cool on the baking sheet for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.
