This creamy cucumber salad is a refreshing and easy side dish made with crisp cucumbers, red onions, and a tangy dill dressing. Perfect for cookouts, potlucks, and warm-weather meals.

  • 3 cups thinly sliced cucumbers

  • 1 cup thinly sliced red onion

  • 1/2 cup sour cream

  • 1 tablespoon white vinegar

  • 2 tablespoons minced fresh dill

  • 1 teaspoon granulated sugar

  • 1/2 teaspoon salt

  • 1/4 teaspoon garlic powder

Instructions

 

  • Slice the red onion thinly using a knife or mandoline. Wash and thinly slice the cucumbers, then pat them dry with paper towels to remove any extra moisture.

  • In a medium bowl, mix together the sour cream, white vinegar, dill, sugar, salt, and garlic powder until well combined.

  • Add the cucumbers and red onions to the bowl and toss gently to coat them evenly in the dressing.

  • Optional: Garnish with extra dill and a sprinkle of black pepper.

  • Serve right away, or cover and chill for an hour to let the flavors blend.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
