  • 2 large chicken breasts, halved to reduce thickness

  • 5 tablespoons mayonnaise

  • 1/2 teaspoon minced garlic

  • 3/4 cup Panko breadcrumbs

  • 1/4 cup finely shredded Parmesan cheese

  • Pinch of salt

  • Freshly ground black pepper

  • Olive oil spray

Instructions

  • In a bowl, mix together the Panko breadcrumbs, Parmesan cheese, salt, and black pepper. In a separate bowl, combine the mayonnaise and minced garlic until well blended.

  • Rinse the chicken breasts and pat dry with paper towels to remove any moisture. This helps the coating stick better.

  • Spread the garlic mayonnaise evenly over each piece of chicken. Then press the chicken into the breadcrumb mixture, coating it thoroughly.

  • Preheat the air fryer to 400°F for 5 minutes. Lightly spray the air fryer basket with olive oil.

 

  • Arrange the coated chicken pieces in the basket without overlapping. Air fry for 6 to 7 minutes on each side, until golden brown and cooked through. The internal temperature should reach 165°F.
