Ingredients

  • 1/3 cup honey

  • 1 1/2 tsp hot sauce (adjust to taste)

  • 3/4 tsp chili flakes

  • 2 large chicken breasts (about 9 oz each)

  • 2 tsp paprika

  • 1 tsp salt

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/2 tsp dried oregano

  • 1/2 tsp black pepper

  • 1/4 tsp cayenne pepper

  • 1/4 cup all-purpose flour

  • 2 large eggs, beaten

  • 1 cup panko breadcrumbs

  • 6 to 8 tbsp vegetable oil (for frying)

  • 7 oz feta cheese, crumbled


Instructions

  • In a small bowl, combine honey, hot sauce, and chili flakes. Warm gently (about 20 seconds in the microwave or on low heat on the stove), stir, then let cool. Adjust spiciness by adding more chili flakes or hot sauce if desired.

  • Slice each chicken breast horizontally to create four evenly sized pieces.

  • In a separate small bowl, mix paprika, salt, onion powder, garlic powder, oregano, black pepper, and cayenne pepper.

  • Prepare three shallow dishes:

    • First dish: flour mixed with half the seasoning blend

    • Second dish: beaten eggs

    • Third dish: panko breadcrumbs mixed with the remaining seasoning

  • Coat each chicken piece by dredging in the flour mixture, then the egg, and finally the seasoned panko. Make sure each piece is thoroughly coated.

  • Heat enough vegetable oil in a large skillet over medium-high heat to cover the pan bottom. Once the oil is hot and breadcrumbs sizzle immediately when dropped in, fry the chicken pieces for 3-4 minutes per side or until golden and crispy and cooked through. Work in batches if needed. Drain on a wire rack set over a tray.

  • Sprinkle crumbled feta evenly over the chicken. Place under a broiler on high heat until the feta softens and develops a light golden crust.

 

  • Drizzle the prepared hot honey over the chicken before serving.
