Juicy, crispy chicken topped with creamy feta and spicy-sweet hot honey—a perfect blend of flavors and textures.
1/3 cup / 110g Honey
1 1/2 tsp Hot Sauce (Frank’s or Cholula)
3/4 tsp Chilli Flakes
2x 250g/9oz Chicken Breasts
2 tsp Paprika
1 tsp Salt
1/2 tsp EACH: Onion Powder, Garlic Powder, Dried Oregano, Black Pepper
1/4 tsp Cayenne Pepper
35g / 1/4 cup Plain Flour
2 Eggs, beaten
65g / 1 cup Panko Breadcrumbs
Vegetable Oil, as needed (6-8 tbsp)
200g / 7oz Feta, crumbled
In a bowl, mix honey, hot sauce, and chili flakes. Warm in the microwave for 20 seconds or simmer on the stove. Stir and let cool to infuse the flavors.
Slice chicken breasts horizontally to create four thin cutlets.
Mix paprika, salt, onion powder, garlic powder, oregano, black pepper, and cayenne in a small bowl.
Set up three shallow bowls: one with flour and half the seasoning, one with beaten eggs, and one with panko breadcrumbs and the remaining seasoning.
Dredge each chicken cutlet in flour, dip in egg, then coat in seasoned panko. Press gently to adhere and place on a tray.
Heat oil in a large skillet over medium-high. Once hot, fry chicken for 3-4 minutes per side until golden and cooked through. Work in batches if needed.
Transfer chicken to a wire rack. Top with crumbled feta and broil until slightly golden and soft.
Drizzle with hot honey before serving. Store any extra honey in the fridge.

b) For a baked version: Toast breadcrumbs at 180C/350F for 5 mins, then follow the same prep. Bake chicken at 220C/430F for 10 mins per side until golden. Finish with feta and grill.
