This easy fruit pizza recipe features a soft brown sugar cookie crust, creamy frosting, and colorful fresh fruit. A perfect dessert for summer gatherings!
Brown Sugar Cookie Crust:
1 ½ cups all-purpose flour (plus more for rolling)
1 teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
½ cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon almond extract
Cream Cheese Frosting:
8 ounces low-fat cream cheese
2–3 tablespoons maple syrup or honey or 1 cup powdered sugar
1 teaspoon vanilla extract
Pinch of fine sea salt
Toppings:
Fresh strawberries
Fresh blueberries, raspberries, blackberries, or your choice of fruit
Optional: a light drizzle of honey
Preheat the oven to 350°F. Grease a quarter sheet pan, a 9×13-inch baking dish, or a 12-inch round pizza pan.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat the softened butter and brown sugar together with a hand or stand mixer on medium speed for about 2 minutes, until light and fluffy.
Add the egg, vanilla extract, and almond extract. Mix until fully incorporated.
Slowly add the dry ingredients and mix on low speed just until combined. Avoid overmixing.
Press the dough evenly into the greased pan. If needed, chill the dough for 10 minutes before pressing. Wetting your fingers slightly can help prevent sticking.
Use a fork to poke small holes across the surface of the dough to reduce puffing.
Bake for 15–18 minutes, or until the edges are lightly golden. Cool on a wire rack for about 20 minutes.
While the crust cools, whisk together the cream cheese, sweetener (maple syrup, honey, or powdered sugar), vanilla extract, and salt until smooth.
Spread the frosting evenly over the cooled cookie crust.
Decorate with fresh sliced fruit, arranging however you like.
Optionally, drizzle a touch of honey over the top for added shine and sweetness.
Slice and serve!
