Brown Sugar Cookie Crust:

  • 1 ½ cups all-purpose flour (plus more for rolling)

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • ½ cup unsalted butter, softened

  • ½ cup packed light brown sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • ½ teaspoon almond extract

Cream Cheese Frosting:

  • 8 ounces low-fat cream cheese

  • 23 tablespoons maple syrup or honey or 1 cup powdered sugar

  • 1 teaspoon vanilla extract

  • Pinch of fine sea salt

Toppings:

  • Fresh strawberries

  • Fresh blueberries, raspberries, blackberries, or your choice of fruit

  • Optional: a light drizzle of honey

Instructions

 

  • Preheat the oven to 350°F. Grease a quarter sheet pan, a 9×13-inch baking dish, or a 12-inch round pizza pan.

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  • In a large mixing bowl, beat the softened butter and brown sugar together with a hand or stand mixer on medium speed for about 2 minutes, until light and fluffy.

  • Add the egg, vanilla extract, and almond extract. Mix until fully incorporated.

  • Slowly add the dry ingredients and mix on low speed just until combined. Avoid overmixing.

  • Press the dough evenly into the greased pan. If needed, chill the dough for 10 minutes before pressing. Wetting your fingers slightly can help prevent sticking.

  • Use a fork to poke small holes across the surface of the dough to reduce puffing.

  • Bake for 15–18 minutes, or until the edges are lightly golden. Cool on a wire rack for about 20 minutes.

  • While the crust cools, whisk together the cream cheese, sweetener (maple syrup, honey, or powdered sugar), vanilla extract, and salt until smooth.

  • Spread the frosting evenly over the cooled cookie crust.

  • Decorate with fresh sliced fruit, arranging however you like.

  • Optionally, drizzle a touch of honey over the top for added shine and sweetness.

  • Slice and serve!
