1 pound ground chicken (preferably a mix of breast and thigh)
1 small apple, peeled and finely minced
1/3 medium onion, finely minced
2 tablespoons fresh parsley, chopped
1 teaspoon sea salt
1/2 teaspoon garlic powder
1/4 teaspoon coarse black pepper
2 tablespoons cooking oil (such as avocado or other neutral oil)
1. Prepare the Sausage Mixture:
In a large mixing bowl, combine the ground chicken, apple, onion, parsley, salt, garlic powder, and black pepper. Mix thoroughly by hand or with a spoon until everything is evenly combined.
2. Shape the Patties:
Divide the mixture into 15 equal portions. You can use a large scoop or shape by hand. Flatten each into a patty about 3/4 inch thick for immediate cooking. For freezing, make them no thicker than 1/2 inch to ensure even cooking from frozen.
3. Cook the Sausages:
Heat oil in a non-stick skillet over medium-high heat. Add the patties in batches, cooking for 3 to 4 minutes on the first side until browned. Flip and cook the other side until golden and the internal temperature reaches 165°F.
4. Cooking from Frozen:
If cooking from frozen, follow the same steps, adding extra time as needed. If the outside browns before the inside is done, reduce the heat and continue cooking until fully cooked.
