1 tablespoon olive oil

1 pound ground beef

1 yellow onion, diced

2 pounds processed cheese, cubed

Two 10-ounce cans diced tomatoes and green chiles (undrained)

½ teaspoon chipotle chile powder

Chopped fresh cilantro (optional, for garnish)

Tortilla chips, for serving
Instructions

In a large nonstick skillet, heat olive oil over medium heat. Add the ground beef and diced onion. Cook, stirring and breaking up the meat, until the beef is browned and fully cooked, about 6–8 minutes. Drain any excess fat.

Reduce the heat to low. Stir in the cubed processed cheese, undrained tomatoes with green chiles, and chipotle chile powder.

Continue cooking, stirring frequently, until the cheese is fully melted and everything is smooth and well blended, about 2–3 minutes.

Transfer to a serving dish or slow cooker on warm setting. Garnish with chopped cilantro if desired.
