Discover how to make juicy, flavorful salsa chicken in the crock pot with minimal prep. Perfect for stress-free dinners, meal prep, and versatile meals your family will love.
2 pounds boneless, skinless chicken breasts (thighs optional, frozen chicken works too)
1 jar (16 oz) salsa (chunky preferred for texture)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground cumin
½ teaspoon chili powder (optional for smoky heat)
1 cup shredded cheddar cheese
Optional garnish: fresh cilantro, lime wedges
Place the chicken breasts in the bottom of your crock pot. No need to thaw if using frozen.
Sprinkle garlic powder, onion powder, cumin, and chili powder evenly over the chicken.
Pour the salsa over the seasoned chicken, covering it completely.
Cover and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours.
Once cooked, shred the chicken directly in the crock pot using two forks and mix well with the salsa.
Optional: Sprinkle shredded cheddar cheese over the top before serving or just after shredding.
Garnish with fresh cilantro and a squeeze of lime if desired.
