Description

These easy Strawberry Shortcake Bars are a sweet and buttery summer dessert layered with juicy strawberries and topped with whipped cream or powdered sugar. Perfect for picnics, parties, or anytime you crave a classic treat in bar form.

For the shortcake base:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

For the filling:

  • 2 cups chopped fresh strawberries

  • 1 tablespoon granulated sugar (optional)

  • 1 tablespoon cornstarch

Optional Toppings:

  • Whipped cream or stabilized whipped topping

  • Powdered sugar or white chocolate drizzle


Instructions

  1. Preheat and prepare the pan:
    Preheat your oven to 350°F. Line a baking pan (9×13-inch works well) with parchment paper and lightly grease it.

  2. Make the shortcake dough:
    In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add in the eggs and vanilla, mixing until smooth.

  3. Add dry ingredients:
    Mix in the flour, baking powder, and salt just until combined. The dough will be thick.

  4. Create the base layer:
    Spread about two-thirds of the dough evenly into the bottom of the prepared pan.

  5. Prepare the strawberry filling:
    In a separate bowl, toss the chopped strawberries with cornstarch and optional sugar. Distribute this mixture evenly over the base layer.

  6. Add the top layer:
    Drop spoonfuls of the remaining dough over the strawberries. It’s fine if it doesn’t completely cover the fruit.

  7. Bake:
    Bake for 30 to 35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

  8. Cool and finish:
    Allow the bars to cool completely in the pan. Once cooled, add whipped cream or dust with powdered sugar before slicing and serving.
