Dressing:

  • 1 teaspoon grated ginger
  • 1 garlic clove, finely chopped
  • 3 tablespoons rice vinegar
  • 1 1/2 tablespoons soy sauce
  • 1 1/2 tablespoons honey
  • 2 tablespoons avocado oil

Salad:

  • 2 cups shredded red cabbage
  • 2 cups shredded green cabbage
  • 1 heart of romaine lettuce, chopped
  • 1 cup shredded carrots
  • 1/2 cup fresh cilantro leaves
  • 3 green onions, sliced
  • 2 cups shredded cooked chicken breast
  • 11 ounces canned mandarin oranges, drained
  • 1/4 cup toasted cashews
  • 1/4 cup sliced almonds

 

Instructions

  • For the dressing, combine grated ginger, chopped garlic, rice vinegar, soy sauce, honey, and avocado oil in a small jar. Whisk until well blended and set aside.
  • For the salad, place chopped romaine in a large bowl. Add red cabbage, green cabbage, carrots, cilantro, green onions, and shredded chicken.
  • Pour the dressing over the salad and toss gently to coat evenly.
  • Serve immediately, topped with mandarin oranges, cashews, and almonds as desired.
