Dressing:

Salad:
- 2 cups shredded red cabbage
- 2 cups shredded green cabbage
- 1 heart of romaine lettuce, chopped
- 1 cup shredded carrots
- 1/2 cup fresh cilantro leaves
- 3 green onions, sliced
- 2 cups shredded cooked chicken breast
- 11 ounces canned mandarin oranges, drained
- 1/4 cup toasted cashews
- 1/4 cup sliced almonds
Instructions
- For the dressing, combine grated ginger, chopped garlic, rice vinegar, soy sauce, honey, and avocado oil in a small jar. Whisk until well blended and set aside.
- For the salad, place chopped romaine in a large bowl. Add red cabbage, green cabbage, carrots, cilantro, green onions, and shredded chicken.
- Pour the dressing over the salad and toss gently to coat evenly.
- Serve immediately, topped with mandarin oranges, cashews, and almonds as desired.
