Ingredients
-
1 lb boneless, skinless chicken breasts or thighs
-
2 tbsp olive oil
-
Salt and pepper, to taste
-
1 tsp paprika
-
1 tsp garlic powder
-
1 tsp onion powder
-
1/2 tsp chili powder (optional for heat)
-
4 tbsp unsalted butter
-
4 cloves garlic, minced
-
2 tbsp honey
-
1/3 cup BBQ sauce (choose your favorite)
-
1 tbsp lemon juice
-
8 small flour or corn tortillas
-
1/2 cup shredded lettuce
-
1/2 cup shredded cheese (cheddar or Monterey Jack)
-
1/4 cup diced red onion
-
1/4 cup chopped cilantro
-
Lime wedges for garnish
Instructions
-
In a mixing bowl, toss chicken with olive oil, salt, pepper, paprika, garlic powder, onion powder, and chili powder until evenly coated.
-
Heat a skillet over medium-high heat. Cook chicken for about 5-6 minutes per side, until fully cooked through. Remove from heat and let rest for a few minutes, then slice or shred.
-
In the same skillet, melt butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
-
Stir in honey, BBQ sauce, and lemon juice. Let the sauce simmer for 2 minutes until it thickens slightly.
-
Add the sliced or shredded chicken back to the skillet and toss in the sauce to coat thoroughly.
-
Warm the tortillas in a separate pan or microwave. Assemble tacos by layering lettuce, saucy chicken, shredded cheese, red onion, and cilantro.
-
Serve with lime wedges on the side for squeezing over the tacos.
