Quick and flavorful Golden Cod with Garlic Tomato Basil Sauce recipe – perfect healthy weeknight dinner packed with fresh herbs and veggies.


Ingredients

  • 1 tablespoon olive oil

  • 3 tablespoons butter, divided

  • 1 pound cod fillets, seasoned with salt and pepper

  • 1 pound cherry tomatoes, halved

  • 3 cloves garlic, chopped

  • 1 pinch red pepper flakes

  • 3 green onions, sliced (separate white and green parts)

  • 1/2 cup chicken broth

  • 2 tablespoons lemon juice

  • Salt and pepper, to taste

  • 1 tablespoon chopped parsley

  • 1 tablespoon chopped basil


Instructions

1. Sear the Cod:
Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Place the seasoned cod fillets in the skillet and cook for 2 to 3 minutes on each side, or until golden brown and cooked through. Transfer the cod to a plate and set aside.

2. Cook the Tomatoes:
In the same skillet, add the cherry tomatoes and cook for 3 to 5 minutes, stirring occasionally, until they begin to soften and blister.

3. Add Flavor:
Lower the heat to medium. Add the chopped garlic, the white parts of the green onions, and red pepper flakes. Stir and cook for about 1 minute, or until fragrant.

4. Make the Sauce:
Pour in the chicken broth, bring to a simmer, and cook for about 3 minutes to let the flavors blend.

5. Finish the Sauce:
Stir in the lemon juice and remaining tablespoon of butter. Season with salt and pepper to your preference.

 

6. Combine and Serve:
Return the cooked cod to the skillet. Sprinkle the green onion tops, parsley, and basil over the dish. Gently stir to warm everything through. Serve immediately, spooning the sauce over the cod.
