For the Salad:

  • 6 cups chopped lettuce (iceberg or romaine)

  • 1 (8-ounce) cooked Greek-marinated chicken breast, sliced or chopped

  • 2 cups sliced tomatoes or Mediterranean-style tomato salad

  • 1 cup sliced Persian or English cucumber

  • ¼ cup kalamata olives

  • ¼ cup feta cheese, crumbled or broken into chunks

For the Greek Dressing:

  • ¼ cup extra virgin olive oil

  • ¼ cup distilled white vinegar or lemon juice (substitute for red wine vinegar)

  • 1 clove garlic, minced

  • 2 teaspoons dried oregano

  • 1 teaspoon sugar

  • ½ teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper


Instructions

 

  • Place the chopped lettuce into a large serving bowl or divide between two salad bowls.

  • Top with sliced chicken, tomatoes, cucumbers, olives, and crumbled feta cheese.

  • In a small jar or bowl, combine olive oil, vinegar or lemon juice, garlic, oregano, sugar, salt, and pepper. Shake or whisk until fully blended.

  • Taste the dressing and adjust seasoning if needed.

  • Drizzle the dressing over the salad just before serving and toss gently to combine.
