Make this easy Grilled Chicken Chipotle Ranch Burrito at home with bold flavors, fresh toppings, and no wine. A family favorite meal!


Ingredients

  • 8 large (10-inch) flour tortillas

  • 16 oz grilled chicken breast strips

  • 16 oz shredded cheddar cheese (or a blend like Colby Jack)

  • 1/2 head iceberg lettuce, chopped (about 4 cups)

  • 1 1/4 cups diced tomatoes (about 3/4 of a large beefsteak tomato)

  • 3 oz crunchy tortilla strips or crushed tortilla chips

  • 1/2 cup ranch dressing

  • 1/2 cup creamy chipotle sauce (non-alcoholic)


Instructions

  • Prepare the ingredients: Shred the cheese, chop the lettuce, and dice the tomatoes. Set everything out for easy assembly.

  • Assemble the burritos:

    • Lay a tortilla flat.

    • Add 1/2 cup shredded cheese.

    • Add 1/2 cup grilled chicken strips.

    • Drizzle 1 tablespoon chipotle sauce and 1 tablespoon ranch dressing.

    • Add 1/2 cup chopped lettuce, 2 tablespoons diced tomatoes, and 1/3 cup tortilla strips.

  • Wrap it up: Fold in the sides and roll the tortilla tightly into a burrito.

  • Grill: Heat a non-stick skillet over medium heat. Toast each burrito on all sides using kitchen tongs until the outside is golden and slightly crispy.
