Ingredients
For the Chicken Marinade:

1.5 pounds boneless, skinless chicken thighs

3 tablespoons fresh lime juice (about 2 limes)

3 garlic cloves, minced

1 teaspoon chili powder

1 teaspoon smoked paprika

8 to 12 small corn tortillas (street taco size)

1/2 cup white onion, finely chopped

1/2 cup fresh cilantro, chopped

Instructions
1. Marinate the Chicken:
In a large bowl, mix together lime juice, olive oil, garlic, cumin, chili powder, paprika, oregano, salt, and pepper. Add chicken thighs and coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 8 hours.
2. Cook the Chicken:
Preheat a skillet or grill over medium-high heat. Remove chicken from marinade and cook for 5 to 7 minutes per side, or until the internal temperature reaches 165°F and the outside is golden and slightly crisp.
3. Rest and Slice:
Transfer the cooked chicken to a cutting board. Let it rest for about 5 minutes, then slice or dice into bite-sized pieces.
4. Warm the Tortillas:
Heat a dry skillet over medium heat. Warm tortillas for 20 to 30 seconds on each side until soft and slightly toasted.
5. Assemble the Tacos:
Add chopped chicken to each tortilla. Top with chopped onion and cilantro. Serve with lime wedges and your choice of optional toppings.
