Chicken Mac and Cheese

A creamy, cheesy chicken mac and cheese made in one skillet—easy, hearty, and perfect for weeknight comfort food.

Ingredients

  • 8 ounce elbow macaroni (or penne, rigatoni, ziti)
  • 2 tablespoon olive oil
  • 1 pound chicken breasts (skinless and boneless, cut in small pieces)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 3 tablespoon all-purpose flour
  • 2 cups milk
  • 1 teaspoon dried mustard
  • 1 cup mozzarella cheese (shredded)
  • 2 cups cheddar cheese (shredded)
  • ¼ cup Parmesan cheese (grated)

 

Instructions

  1. Cook the pasta according to package directions. Drain the pasta and rinse under cold water to keep it from clumping. Set aside.

  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5–7 minutes, until no longer pink. Remove and set aside.

  3. In the same skillet, add chopped onion and cook for 3–5 minutes until soft.

  4. Add the minced garlic and sauté briefly, just until it becomes aromatic. Season with salt and pepper.

  5. Add flour to the onions and mix thoroughly to combine. Cook for 1 minute.

  6. Slowly whisk in milk and dried mustard. Cook, stirring, until the mixture starts to thicken.

  7. Add mozzarella and cheddar. Stir until fully melted and smooth.

  8. Return the chicken and pasta to the skillet. Mix until everything is evenly coated.

  9. Sample and season with additional salt and pepper, if desired.

  10. Garnish with freshly grated Parmesan cheese and serve warm.

  11. Optional Topping:

  • Melt butter in a small skillet.

  • Add breadcrumbs and cook for 3–4 minutes until golden and crispy.

  • Sprinkle over the mac and cheese before serving.

 

Notes

Store in an airtight container up to 4 days in the fridge or freeze up to 3 months. Thaw in fridge before reheating.
