2 bone-in, skin-on chicken breasts (split chicken breast preferred)
2 tablespoons olive oil (or avocado oil)
1 teaspoon salt (sea salt recommended)
½ teaspoon freshly ground black pepper
1 teaspoon garlic powder (fresh garlic can be substituted)
1 teaspoon smoked paprika
1 tablespoon fresh rosemary or thyme (optional, for garnish and aroma)
Preheat the oven to 400°F.
Pat the chicken breasts dry with paper towels to help crisp the skin.
Drizzle olive oil over the chicken and rub evenly with salt, pepper, garlic powder, and smoked paprika.
Let the chicken sit at room temperature for about 20 minutes for even cooking.
Heat a skillet over medium-high heat and place the chicken skin-side down. Sear for 3–4 minutes until the skin is golden and crispy.
Transfer the chicken to a baking tray, skin-side up, and bake in the preheated oven for 25–30 minutes or until the internal temperature reaches 165°F.
Remove from the oven and let rest for 5 minutes. Garnish with fresh rosemary or thyme before serving if desired.
