  • 2 bone-in, skin-on chicken breasts (split chicken breast preferred)

  • 2 tablespoons olive oil (or avocado oil)

  • 1 teaspoon salt (sea salt recommended)

  • ½ teaspoon freshly ground black pepper

  • 1 teaspoon garlic powder (fresh garlic can be substituted)

  • 1 teaspoon smoked paprika

  • 1 tablespoon fresh rosemary or thyme (optional, for garnish and aroma)

Instructions

 

  • Preheat the oven to 400°F.

  • Pat the chicken breasts dry with paper towels to help crisp the skin.

  • Drizzle olive oil over the chicken and rub evenly with salt, pepper, garlic powder, and smoked paprika.

  • Let the chicken sit at room temperature for about 20 minutes for even cooking.

  • Heat a skillet over medium-high heat and place the chicken skin-side down. Sear for 3–4 minutes until the skin is golden and crispy.

  • Transfer the chicken to a baking tray, skin-side up, and bake in the preheated oven for 25–30 minutes or until the internal temperature reaches 165°F.

  • Remove from the oven and let rest for 5 minutes. Garnish with fresh rosemary or thyme before serving if desired.
