Crispy jalapeño chicken taquitos made in the oven with a creamy, spicy filling—perfect for appetizers, snacks, or weeknight meals.
Ingredients

3 to 4 boneless, skinless chicken breasts, cooked and diced

8 ounces cream cheese

1 cup shredded cheddar cheese

1/2 cup chopped jalapeños (fresh or pickled)

8 flour tortillas (6-inch)

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon garlic powder
Instructions

Preheat your oven to 400°F. Lightly grease a baking sheet or line it with parchment paper.

In a large bowl, combine the cooked, diced chicken with cream cheese, cheddar cheese, jalapeños, cumin, and garlic powder. Mix until the filling is evenly blended.

Spoon about 2 tablespoons of the mixture onto the lower third of each tortilla. Roll the tortilla tightly, tucking in the sides as you go, and place seam-side down on the prepared baking sheet.

Lightly brush the tops of the taquitos with olive oil to help them crisp up in the oven.

Bake for 15 to 20 minutes, or until the tortillas are golden brown and crispy.
