Spicy Jalapeño Chicken Taquitos with a Crispy Oven Finish

Crispy jalapeño chicken taquitos made in the oven with a creamy, spicy filling—perfect for appetizers, snacks, or weeknight meals.


Ingredients

  • 3 to 4 boneless, skinless chicken breasts, cooked and diced

  • 8 ounces cream cheese

  • 1 cup shredded cheddar cheese

  • 1/2 cup chopped jalapeños (fresh or pickled)

  • 8 flour tortillas (6-inch)

  • 2 tablespoons olive oil

  • 1 teaspoon ground cumin

  • 1 teaspoon garlic powder


Instructions

  • Preheat your oven to 400°F. Lightly grease a baking sheet or line it with parchment paper.

  • In a large bowl, combine the cooked, diced chicken with cream cheese, cheddar cheese, jalapeños, cumin, and garlic powder. Mix until the filling is evenly blended.

  • Spoon about 2 tablespoons of the mixture onto the lower third of each tortilla. Roll the tortilla tightly, tucking in the sides as you go, and place seam-side down on the prepared baking sheet.

  • Lightly brush the tops of the taquitos with olive oil to help them crisp up in the oven.

  • Bake for 15 to 20 minutes, or until the tortillas are golden brown and crispy.

 

  • Serve warm with your choice of sour cream or guacamole on the side.
