Description

Grill or air fry these juicy garlic Parmesan chicken skewers for a flavorful, easy dinner packed with bold garlic butter flavor.

Ingredients

Scale

For the Chicken:

  • 1 to pounds chicken breasts or thighs, cut into equal-sized cubes

  • 3 tablespoons olive oil

  • ¼ cup lemon juice

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 to 2 teaspoons lemon pepper seasoning (no salt added)

  • ½ teaspoon salt

For the Garlic Parmesan Butter:

  • 4 to 6 tablespoons butter

  • 3 garlic cloves, minced

  • ¼ cup grated Parmesan cheese

  • 2 teaspoons lemon juice (optional)

  • 3 tablespoons fresh parsley or cilantro, chopped

  • Sliced lemon for garnish (optional)

Instructions

  • In a large bowl, combine the chicken, olive oil, lemon juice, paprika, garlic powder, onion powder, lemon pepper seasoning, and salt. Toss until the chicken is evenly coated. Cover and refrigerate for at least 15 minutes or up to 4 hours.

  • If using wooden skewers, soak them in water for 20 minutes to prevent burning.

  • Thread the marinated chicken onto skewers and place on a baking sheet.

  • In a small saucepan over low heat, melt the butter. Stir in the minced garlic and simmer for 2 minutes. Remove from heat and set aside.

  • Preheat the grill to medium-high heat (around 400°F).

  • Grill the skewers for 8–10 minutes, turning frequently.

  • Mix the Parmesan cheese and chopped parsley into the garlic butter.

  • Brush the skewers with the garlic Parmesan butter as they cook. Grill for another 2 minutes on each side, or until the internal temperature reaches 165°F.

  • Let rest for a few minutes, then brush with any remaining butter and finish with a squeeze of lemon juice if desired.
