  • 2 cups cheddar cheese, grated

  • 1 cup milk

  • 2 Tbsp. unsalted butter

  • 1 1/2 Tbsp. all-purpose flour

  • 1 Tbsp. Cajun seasoning

  • Ranch dressing

  • Vegetable oil, for frying

  • Chopped chives (optional garnish)

Instructions

  1. Prep the Potatoes: Peel the russet potatoes and slice them into thick steak-style wedges. Place them in a bowl of cold water and soak for at least 1 hour to remove excess starch.

  2. Fry the Potatoes: Heat about 1/2 inch of vegetable oil in a heavy-bottomed skillet over medium-high heat. Drain and thoroughly pat the potatoes dry with paper towels.

  3. Cook Until Golden: Fry the wedges in batches until golden brown and crispy on both sides. Let them drain on a wire rack.

  4. Make the Cheese Sauce: In a medium saucepan, melt butter over medium heat. Stir in flour and cook until bubbly, about 1 minute. Gradually whisk in milk and bring to a boil. Lower the heat and stir in cheddar cheese until melted and smooth.

  5. Season the Fries: Toss the hot fries in a large bowl with Cajun seasoning until evenly coated.

  6. Assemble: Layer the seasoned fries on a serving plate. Generously drizzle with cheese sauce and ranch dressing. Top with chopped chives if desired.
