For the Crispy Rice:

  • 3 cups cooked short-grain sushi rice

  • 2 tablespoons rice vinegar

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • Vegetable oil (for frying)

For the Spicy Salmon Topping:

  • 1 pound sushi-grade salmon, finely chopped

  • 4 tablespoons mayonnaise

  • 2 tablespoons sriracha

  • 2 tablespoons chopped scallions

  • 2 teaspoons soy sauce

  • 2 teaspoons sesame oil

For Serving:

  • Sliced avocado

  • Thinly sliced jalapeño

  • Toasted black and white sesame seeds


Instructions

  • Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently stir the mixture into the cooked sushi rice until evenly coated.

  • Shape and Chill: Line a baking dish with plastic wrap. Spread the seasoned rice into an even layer, pressing it down gently. Cover and refrigerate for at least 4 hours or overnight to firm up.

  • Prepare the Salmon Mixture: In a medium bowl, combine the chopped salmon with mayonnaise, sriracha, scallions, soy sauce, and sesame oil. Mix thoroughly and refrigerate until ready to serve.

  • Fry the Rice: Once chilled, cut the rice into 16 small rectangles. Heat vegetable oil in a pan over medium heat and fry the rice pieces on each side until golden and crispy. Drain on a paper towel-lined plate.

 

  • Assemble: Top each crispy rice piece with a slice of avocado, a spoonful of spicy salmon mixture, and a few jalapeño slices. Finish with a sprinkle of toasted sesame seeds. Serve immediately.
