4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt (or to taste)
½ teaspoon black pepper
1 medium yellow onion, thinly sliced
1 cup sliced mushrooms (button or cremini)
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup low-sodium chicken broth
½ cup heavy cream
1 cup shredded Monterey Jack cheese (or your preferred variety)
Fresh parsley or chives (optional, for garnish)
1. Prepare and Season Chicken:
Pat the chicken breasts dry with paper towels. Season both sides evenly with paprika, garlic powder, salt, and black pepper.
2. Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Sear the chicken on each side for 4–5 minutes, until golden brown. Do not cook fully through. Remove from the pan and set aside.
3. Caramelize the Onions and Sauté Mushrooms:
In the same skillet, melt butter over medium heat. Add the sliced onions and cook for about 8–10 minutes, stirring occasionally, until golden and softened. Add the mushrooms and continue cooking for 5 minutes until tender and browned. Transfer both to a bowl and set aside.
4. Make the Gravy:
Sprinkle flour into the skillet drippings and stir continuously for 1 minute. Slowly whisk in the chicken broth, then add the heavy cream. Continue to whisk until the sauce thickens, about 3–5 minutes. Season with additional salt and pepper as needed.
5. Assemble and Bake:
Preheat the oven to 375°F (190°C). Arrange the seared chicken breasts in a baking dish. Spoon the caramelized onions and mushrooms evenly over each piece. Pour the mushroom gravy over the top, then sprinkle with shredded cheese.
6. Bake Until Done:
Bake in the preheated oven for 10–15 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is fully melted and bubbling.
7. Garnish and Serve:
Remove from the oven and garnish with chopped parsley or chives, if desired. Serve hot with your favorite sides.
