1 lb chicken breast, sliced into thin strips against the grain
2 bell peppers (mixed colors), sliced into strips
1 large onion, sliced into thin half-moons
2 tbsp olive oil
2 tsp fajita seasoning
1 tbsp lime juice, freshly squeezed

8–10 (6-inch) flour tortillas
2–3 cloves garlic, minced (optional)

Instructions
Slice chicken breast into 1/4-inch strips against the grain. Cut bell peppers into strips and onion into half-moons.
Heat a large skillet over medium-high heat. Add olive oil and allow to heat until shimmering.
Add chicken strips to the hot skillet in a single layer. Season with 1 1/2 teaspoons fajita seasoning, plus salt and pepper to taste.
Cook chicken undisturbed for 2-3 minutes until golden on one side, then stir and cook another 2-3 minutes until cooked through (165°F). Transfer to a plate and cover loosely with foil.
In the same skillet, add a touch more oil if needed. Add sliced bell peppers and onions, sprinkling with remaining fajita seasoning.
Stir-fry vegetables for 4-5 minutes until tender-crisp with slight charring on edges.
Return the cooked chicken to the skillet with the vegetables. Drizzle with fresh lime juice and stir to combine. Cook for 1 minute more to rewarm chicken.
Meanwhile, warm tortillas by wrapping in foil and heating in a 300°F oven for 5 minutes, or heating individually in a dry skillet.
Serve the sizzling fajita mixture with warmed tortillas and your choice of toppings, allowing everyone to build their own fajitas.
Notes
For even more flavor, you can marinate the chicken for 30 minutes to 4 hours before cooking.
Make your own fajita seasoning by combining 1 tablespoon chili powder, 1 teaspoon each of cumin and paprika, 1/2 teaspoon each of garlic and onion powder, 1/4 teaspoon each of dried oregano and black pepper, plus salt to taste.
Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for 2-3 months.
