Air Fryer Fish Cakes

Ingredients

  • 1 lb white fish fillets (cod, haddock, or tilapia), cubed
  • 1 egg, lightly beaten
  • 2 tbsp mayonnaise
  • 1 tbsp lemon zest
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 1 clove garlic, minced (optional)
  • 1 tsp Dijon mustard (optional)
  • 1 tsp Old Bay seasoning (optional)
  • 2 tbsp green onions, thinly sliced (optional)
  • Cooking oil spray
  • Lemon wedges for serving
  • Tartar sauce for serving (optional)

Instructions

  1. In a food processor, combine fish, egg, mayonnaise, lemon zest, parsley, salt, and pepper. Pulse until mixture is coarsely chopped but not smooth.
  2. Transfer to a bowl and gently fold in breadcrumbs until the mixture holds together. Add any optional mix-ins at this point.
  3. With slightly dampened hands, form the mixture into 8 equal patties about 1/2-inch thick.
  4. Place patties on a parchment-lined tray and refrigerate for 20-30 minutes to firm up.
  5. Preheat air fryer to 375°F for 3-5 minutes.
  6. Lightly spray both sides of each patty with cooking oil.
  7. Place patties in the air fryer basket in a single layer, leaving space between each one.
  8. Cook for 5-6 minutes, then carefully flip and cook for another 5-6 minutes until golden brown and internal temperature reaches 145°F.
  9. Rest for 2-3 minutes before serving with lemon wedges and tartar sauce if desired.

Notes

  • For extra crispy exterior, you can use half panko and half regular breadcrumbs.
  • Ensure your fish is very fresh and pat it dry before processing to prevent excess moisture.
  • These fish cakes freeze well both before and after cooking.
