  • 2 slices sourdough bread
  • 3 oz brie cheese, sliced and rind removed
  • 1/2 medium apple, thinly sliced (Honeycrisp or Granny Smith recommended)
  • 2 tbsp butter, softened
  • 1 tsp honey
  • 1/4 tsp fresh thyme leaves (optional)
  • 1 tsp Dijon mustard (optional)
  • 2 tbsp caramelized onions (optional)
  • Handful of arugula (optional)

Instructions

  1. Butter one side of each bread slice, covering the entire surface.
  2. Place one slice butter-side down on your work surface.
  3. Layer half of the brie slices evenly across the bread.
  4. Arrange apple slices in a single, slightly overlapping layer.
  5. Drizzle honey over the apples and sprinkle with thyme if using.
  6. Add any optional ingredients like Dijon mustard, caramelized onions, or arugula.
  7. Place remaining brie on top of fillings.
  8. Top with second bread slice, butter-side up.
  9. Heat a non-stick skillet over medium heat until warm but not smoking.
  10. Place sandwich carefully in the pan and cook for about 3 minutes until golden brown.
  11. Flip gently using a wide spatula and cook another 2-3 minutes until second side is golden and cheese is fully melted.
  12. Remove from heat and let rest for 1 minute on a cutting board.
  13. Slice diagonally and serve immediately while warm and melty.
