Incredibly tender beef chunks braised in apple cider with vegetables for a comforting, flavorful meal that’s perfect for cooler weather.

  • 3 pounds beef chuck, cut into large chunks
  • 2 tablespoons avocado oil or olive oil
  • 2 tablespoons flour
  • 1½ tablespoons kosher salt
  • 1 teaspoon black pepper
  • 1 large onion, sliced
  • 8 garlic cloves (6 whole, 2 minced)
  • 10 ounces mushrooms, sliced
  • 1 pound baby potatoes
  • 2 cups pearl onions, peeled
  • 1¼ cups apple cider (non-alcoholic)
  • 1¼ cups beef broth
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 5 sprigs fresh thyme
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 300°F with rack in center position.
  2. Pat beef dry, season with salt and pepper, then lightly coat with flour.
  3. Heat oil in Dutch oven over medium-high heat. Sear beef chunks until deeply browned on all sides (about 5-6 minutes total). Transfer to a plate.
  4. Lower heat to medium, add butter, then cook sliced onions, pearl onions, mushrooms, and minced garlic for 6-8 minutes until softened.
  5. Pour in apple cider, beef broth, mustard, and Worcestershire sauce, scraping up browned bits from pot bottom.
  6. Return beef to pot, add whole garlic cloves, baby potatoes, and thyme sprigs. Cover and braise in oven for 2½-3 hours until beef is fork-tender.
  7. If desired, thicken sauce by simmering uncovered for 10 minutes on stovetop. Adjust seasoning before serving.
