Apple Cookies

Soft and chewy oatmeal cookies packed with fresh apple pieces and warm cinnamon spice.

  • 1 1/4 cups (177g) all-purpose flour (scoop and level to measure)
  • 1 1/4 cups (120g) rolled old fashioned oats
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (160g) packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (120g) finely chopped peeled Granny Smith apple (1/4-inch cubes or smaller)
  • 2 tsp fresh lemon juice

Instructions

  1. Preheat oven to 350°F. Line baking sheets with silicone mats or parchment paper.
  2. Whisk together flour, oats, cinnamon, baking soda, and salt in a bowl.
  3. Toss chopped apples with lemon juice to prevent browning.
  4. Cream butter and brown sugar until combined using a stand mixer with paddle attachment.
  5. Mix in egg and vanilla extract until incorporated.
  6. Add flour mixture and mix until just combined, then fold in apple pieces.
  7. Drop about 2 tablespoons of dough per cookie onto the lined baking sheets, leaving 2 inches between each. Slightly flatten each cookie.
  8. Bake one sheet at a time for 14-15 minutes until cookies are set.
  9. Let the cookies rest on the baking sheet for a few minutes, then move them to a wire rack to finish cooling.

Notes

For best results, chop apples into small, uniform pieces. These cookies freeze well for up to 3 months.
