A stunning puffy pancake with caramelized apples that’s perfect for breakfast or brunch.

Ingredients

  • 2 tablespoons butter (or vegan earth balance)
  • 3 apples, peeled, cored and sliced
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 3 large eggs
  • ½ cup almond milk (or regular milk)
  • 2 tablespoons flour (any kind: white, wheat, spelt, or a gluten-free blend)
  • ¼ teaspoon baking powder
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Mix brown sugar and cinnamon in a small bowl.
  3. Whisk eggs and milk together in a medium bowl.
  4. Combine flour and baking powder, then stir into the egg mixture.
  5. Heat butter in an oven-safe skillet, add apple slices and 1 tablespoon of the brown sugar mixture. Cook until softened, about 5 minutes.
  6. Pour batter over the apples and sprinkle remaining brown sugar mixture on top.
  7. Bake until puffed and golden, about 18-20 minutes.
  8. Dust with powdered sugar before serving.
