Asian Chicken Skewers with Honey Garlic Sauce

  • 1 lb boneless skinless chicken thighs, cut into 1-inch cubes
  • 3 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp sesame oil
  • 68 wooden skewers, soaked in water for at least 30 minutes
  • 1 tbsp rice vinegar (optional)
  • 1 tbsp hoisin sauce (optional)
  • ¼ tsp red pepper flakes (optional)
  • 34 green onions, sliced for garnish
  • 1 tbsp toasted sesame seeds

Instructions

  1. In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, and sesame oil.
  2. Add chicken pieces to the marinade and toss to coat thoroughly. Cover and refrigerate for 20 minutes to 2 hours.
  3. Preheat grill or grill pan to medium-high heat (around 375-400°F).
  4. Remove chicken from marinade, reserving the liquid for basting.
  5. Thread 5-6 pieces of chicken onto each soaked wooden skewer, leaving small gaps between pieces.
  6. Transfer reserved marinade to a small saucepan and bring to a boil. Simmer for 3-4 minutes until slightly thickened.
  7. Grill skewers for 5-6 minutes per side, or until chicken reaches 165°F internally and has nice grill marks.
  8. During the last 2 minutes of cooking, brush with the reduced marinade sauce.
  9. Remove from heat and let rest for 2-3 minutes.
  10. Garnish with sliced green onions and toasted sesame seeds before serving.

Notes

  • For spicier skewers, double the amount of red pepper flakes or add a teaspoon of sriracha to the marinade.
  • Chicken thighs stay juicier than breast meat, but you can substitute chicken breast if preferred – just reduce cooking time by 1-2 minutes per side.
  • For a complete meal, serve over rice with stir-fried vegetables.
