Asian Ginger Marinade Grilled Chicken

  • 2 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 tbsp minced fresh ginger
  • 2 cloves garlic, minced
  • ¼ cup soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp honey
  • 2 tbsp lime juice
  • 3 green onions, thinly sliced (for garnish)
  • 1 tbsp sesame seeds (for garnish)
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tbsp rice vinegar (optional)
  • 1 tbsp brown sugar (optional)

Instructions

  1. In a medium bowl, combine minced ginger, garlic, soy sauce, sesame oil, honey, and lime juice. Whisk until well incorporated.
  2. Pat chicken breasts dry with paper towels. If thick, butterfly or pound to even ½-inch thickness for consistent cooking.
  3. Place chicken in a shallow dish or resealable bag and pour marinade over, ensuring each piece is thoroughly coated.
  4. Refrigerate for at least 30 minutes, preferably 2-4 hours for better flavor development.
  5. Preheat grill to medium-high heat (375-400°F). Clean and oil the grates to prevent sticking.
  6. Remove chicken from marinade, allowing excess to drip off. Discard used marinade.
  7. Place chicken on the preheated grill and cook for 6-7 minutes per side, or until internal temperature reaches 165°F.
  8. Transfer grilled chicken to a clean plate and tent loosely with foil. Rest for 5 minutes to allow juices to redistribute.
  9. Slice chicken against the grain into ½-inch pieces.
  10. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • For maximum flavor, marinate the chicken overnight in the refrigerator.
  • If you don’t have a grill, use a grill pan or cast-iron skillet over high heat.
  • Make shallow cuts in thicker parts of chicken before marinating to allow better flavor penetration.
  • Reserve a portion of the marinade before adding raw chicken if you want to use it as a sauce (must be cooked for 2-3 minutes).
