  • 8 strips bacon, cooked until crispy
  • 6 large eggs
  • 1 tablespoon milk (optional, for fluffier eggs)
  • Pinch of salt and pepper
  • 12 tablespoons soy sauce (optional)
  • 34 green onions, thinly sliced
  • 1 tablespoon sesame seeds, lightly toasted
  • 1 ripe avocado, sliced (optional)
  • Sriracha sauce, to taste (optional)
  • ¼ cup fresh cilantro, chopped (optional)
  • ½ cup thinly sliced bell peppers (optional)
  • ¼ cup shredded cheese, such as cheddar or pepper jack (optional)

Instructions

  1. Prepare your workstation by filling a large, shallow dish with warm water and having a clean, slightly damp kitchen towel ready.
  2. Cook bacon strips in a skillet over medium heat until desired crispness, about 5-7 minutes. Transfer to a paper towel-lined plate.
  3. Whisk eggs with salt, pepper, and optional tablespoon of milk in a bowl. Heat a non-stick pan over medium-low heat with a small amount of butter or oil.
  4. Pour egg mixture into pan and gently stir occasionally until just set but still slightly glossy, about 2-3 minutes. Remove from heat while eggs still look slightly wet.
  5. Dip a rice paper sheet into warm water for 10-15 seconds until it begins to soften but is still slightly firm. Place on damp kitchen towel.
  6. Place 2-3 tablespoons of scrambled eggs in the lower third of the rice paper, leaving about 1 inch from the edges.
  7. Layer 1-2 strips of bacon on top of eggs, then sprinkle with sliced green onions and optional drizzle of soy sauce.
  8. Add any optional ingredients like avocado slices, cheese, herbs, or sriracha at this stage.
  9. Fold in the sides of rice paper toward center, then fold up the bottom edge over the filling. Continue rolling tightly until completely sealed.
  10. Sprinkle the outside with sesame seeds while still slightly tacky. For extra flavor, brush lightly with sesame oil.
  11. Serve immediately, cutting each wrap diagonally to showcase the filling.

Notes

For easier handling, try double-layering rice paper sheets if you find they tear easily.

Let hot fillings cool slightly before wrapping to prevent the rice paper from becoming too sticky.

For meal prep, store cooked components separately and assemble fresh wraps when ready to eat.

Rice paper wraps are best consumed immediately as they tend to harden when refrigerated.
