Baked Feta Eggs with Spinach and Tomatoes

A Mediterranean-inspired breakfast dish featuring creamy baked feta, juicy tomatoes, fresh spinach, and perfectly cooked eggs.

 

Ingredients

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 garlic cloves, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes
  • 1 cup baby spinach, chopped
  • 4 large eggs
  • Optional: chopped fresh basil or chives for garnish

Instructions

  1. Preheat oven to 400°F.
  2. Divide tomatoes, bell pepper, onion, garlic, and feta cheese among four oven-safe ramekins or arrange in a single baking dish with feta in the center. Drizzle with olive oil.
  3. Mix oregano, salt, thyme, black pepper, and red pepper flakes; sprinkle over vegetables and cheese.
  4. Bake for 25 minutes until vegetables soften and feta begins to melt.
  5. Remove from oven, stir to blend softened feta with vegetables, and mix in chopped spinach.
  6. Create wells in the mixture and crack an egg into each one.
  7. Return to oven for 10 minutes or until eggs reach desired doneness.
  8. Garnish with fresh herbs if desired and serve with crusty bread.
