Baked Herb Chicken

  • 8 bone-in, skin-on chicken thighs (about 22.5 pounds)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 4 garlic cloves, minced
  • 1 lemon, thinly sliced + 2 tablespoons juice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh sage leaves, chopped (optional)
  • 1/2 teaspoon dried oregano (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Pat the chicken thighs dry with paper towels.
  2. Allow the chicken to sit at room temperature for 15-20 minutes while preparing the herb mixture.
  3. In a medium bowl, combine olive oil, rosemary, thyme, minced garlic, lemon juice, salt, and pepper. Add optional ingredients if using.
  4. Place chicken in a large bowl and pour the herb mixture over them. Massage thoroughly, lifting skin to get herbs underneath.
  5. Line a rimmed baking sheet with parchment paper. Arrange chicken thighs skin-side up, leaving space between pieces.
  6. Tuck lemon slices partially under and around the chicken.
  7. Bake for 35-40 minutes, until chicken reaches an internal temperature of 165°F and skin is golden brown.
  8. For extra-crispy skin, broil for the final 2-3 minutes, watching carefully to prevent burning.
  9. Remove from oven and let rest for 5-10 minutes before serving.
  10. Garnish with additional fresh herbs and lemon wedges if desired.

Notes

  • For maximum flavor, prepare the herb mixture up to 24 hours in advance and let the chicken marinate in the refrigerator.
  • Bring to room temperature before baking for even cooking.
  • If using boneless, skinless chicken thighs, reduce cooking time to 25-30 minutes.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
