  • 1 tablespoon butter
  • 4 pounds russet potatoes, peeled, cut into 1-inch pieces
  • 1 cup whole milk
  • 1/2 cup (1 stick) butter, melted
  • 1 1/2 cups grated mozzarella
  • 1 cup freshly grated Parmesan
  • Salt and freshly ground black pepper
  • 2 tablespoons plain dry bread crumbs

Instructions

  1. Preheat oven to 400°F. Coat a 13x9x2-inch baking dish with 1 tablespoon butter.
  2. Cook potatoes in boiling salted water until very tender, about 15 minutes.
  3. Drain potatoes and return to pot. Mash well.
  4. Mix in milk and melted butter until incorporated.
  5. Fold in mozzarella and 3/4 cup Parmesan. Season with salt and pepper to taste.
  6. Transfer mixture to prepared baking dish, spreading evenly.
  7. Combine bread crumbs with remaining 1/4 cup Parmesan in a small bowl.
  8. Sprinkle bread crumb mixture evenly over potatoes.
  9. Bake uncovered until topping is golden brown, about 20 minutes.
  10. Let stand 5 minutes before serving.
