Balsamic Brussels Sprouts

Sweet, tangy balsamic Brussels sprouts roasted to caramelized perfection with honey, pecans, and dried cranberries.

 

Ingredients

  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons extra-virgin olive oil
  • 1½ tablespoons balsamic vinegar
  • 2 teaspoons honey or maple syrup
  • ½ teaspoon sea salt
  • Freshly ground black pepper
  • ⅓ cup toasted pecan halves
  • 2 tablespoons dried cranberries or pomegranate arils
  • Fresh parsley leaves, for garnish

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Place halved Brussels sprouts in a bowl and toss with olive oil, balsamic vinegar, honey, salt and pepper until evenly coated.
  3. Arrange Brussels sprouts cut-side down on the prepared baking sheet, leaving space between each piece.
  4. Roast for 20-30 minutes until golden brown and tender, depending on sprout size.
  5. Transfer to a serving dish and top with toasted pecans, dried cranberries and fresh parsley.
