  • ½ cup mayonnaise (regular or light)

  • 1½ cups all-purpose flour, sifted

  • ¾ cup granulated sugar

  • 2 large eggs, room temperature

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 teaspoon vanilla extract (optional)

  • Optional add-ins: ½ cup chopped walnuts or pecans, ½ cup chocolate chips, 1 teaspoon cinnamon, ½ teaspoon nutmeg, ¼ cup shredded coconut

Instructions

 

  • Preheat oven to 350°F. Grease a 9×5-inch loaf pan or line it with parchment paper.

  • In a large bowl, mash the bananas until smooth.

  • Add mayonnaise and eggs to the bananas; stir until fully combined and creamy.

  • In a separate bowl, sift together flour, baking soda, salt, and any optional spices.

  • Gently fold the dry ingredients into the wet banana mixture until just combined. The batter should be slightly lumpy—avoid overmixing.

  • Fold in any optional add-ins like nuts or chocolate chips if using.

  • Pour the batter into the prepared pan and smooth the top.

  • Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

  • Let the bread cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
