BBQ Chicken Grilled Cheese

The ultimate comfort sandwich combining tender BBQ chicken with melty cheese between crispy buttered bread.

 

Ingredients

  • 4 large or 8 small thick slices of Sourdough, Tiger or Giraffe Bread (UK)
  • 2 packed cups / 250g-300g Cooked Chicken, shredded (see notes)
  • 2/3 cup / 160g BBQ Sauce, or to preference
  • 4 square slices of Monterey/Pepper Jack Cheese
  • 4 square slices of Cheddar (or second cheese of choice)
  • 1/41/3 cup finely diced Red Onion
  • 1/4 cup Pickled Jalapeños, finely diced (or to spice preference)
  • Butter, as needed

Instructions

  1. Combine shredded chicken, BBQ sauce, jalapeños and red onion in a mixing bowl.
  2. Place bread slices in a cool pan, butter one side, then flip butter-side-down.
  3. Top with Monterey Jack cheese, chicken mixture, then cheddar cheese.
  4. Add top bread slices and butter the outside.
  5. Cook on medium heat until golden brown on both sides and cheese is fully melted.
  6. Slice in half and serve immediately.

Notes

Rotisserie chicken works wonderfully for this recipe. You can also use leftover grilled, baked, or poached chicken breasts. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
