Easy BBQ Chicken Salad: A Light and Satisfying Dinner

A delicious combination of grilled BBQ chicken, fresh vegetables, and creamy BBQ ranch dressing for a complete meal in one bowl.

 

Ingredients

  • 2 boneless, skinless chicken breasts pounded 1/2 inch thick
  • 2 teaspoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons homemade barbecue sauce or prepared store-bought sauce
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes or grape tomatoes, halved
  • 1 cup canned low-sodium black beans rinsed and drained
  • ½ cup canned Mexicorn drained
  • ¼ cup diced red onion
  • Crushed tortilla chips or strips for serving
  • Chopped fresh cilantro for serving

For the BBQ Ranch Dressing:

  • ⅓ cup prepared light ranch dressing
  • 1 tablespoon homemade barbecue sauce or prepared store-bought sauce

Instructions

  1. Preheat grill to medium-high. Brush chicken with olive oil and season with salt and pepper.
  2. Grill chicken for 4 minutes on first side, flip, brush with BBQ sauce, and grill 3-4 minutes more until cooked through.
  3. Remove chicken to a plate, brush with more BBQ sauce, cover and rest 5 minutes before chopping.
  4. Mix ranch dressing and BBQ sauce in a small bowl for the dressing.
  5. Combine romaine, tomatoes, beans, Mexicorn, red onion and chopped chicken in a large bowl.
  6. Drizzle with dressing, toss to coat, and serve topped with tortilla chips and cilantro.
